Operation: Fill Freezer

So how is a girl with swollen feet and limited to a wandering radii of 2 blocks to fill the time whilst she awaits either for labor to start, or to hit her c-date? Cooking and baking of course!

I’m trying to fill the freezer with our favorite foods so that we don’t have to rely on only ordering take out for the first few weeks of the Cylon invasion. I’ve also bought 4 bags of our favorite coffee from La Colombe so that we can mainline the good stuff whilst we get to grips with parenthood (I’m also toying with ordering this for weekend breakfasts). I figure that little treats over that first month (or eighteen years) could be all that stands between happy or grumpy adults…. Okay it’s me that needs the coffee and pastries on tap.

Today I finished the first round of cooking and baking:

  • Individual Shepherd’s Pie (4 servings)
  • Individual Chicken Pot Pie (4 servings)
  • Butternut & Apple Soup (2 servings)
  • Pea & Mozzarella Soup (4 servings)
  • Chicken Coconut Soup (4 servings)
  • Peanut Butter Chocolate Chip Cookie Dough (shaped into a roll so that we can cut & bake as needed)

Pre-pregnancy I would have been able to do all this in a day but given my current form it’s taken 4 days. I’m trying to make the freezer food as varied as possible, and not just have lots of portions of the same thing. I got the cutest little foil containers for making the individual pies and cakes, and I’m labeling them all with cooking instructions so that Alex can take care of that whilst I am pinned to the sofa breastfeeding two little Cylons.

Tomorrow I am going to start round two, and hopefully I’ll be able to make:

  • Chili
  • Bolognese
  • Spiced Date Loaf
  • Banana Bread
  • Crumble Topping

Alex claims I am not “nesting” but trying to open my very own Marks & Spencer Food Hall!
